Ingredients

Chocolate Pastry:

½ cup unsalted butter, at room temperature

½ cup icing sugar, sifted

3 large egg yolks

1 ¼ cup cake flour

2 tablespoons cornstarch

½ teaspoon salt

 

Filling:

1 egg white, lightly whisked

3 large eggs, separated

½ cup sugar, divided

2 teaspoons finely grated orange zest

1 teaspoon vanilla extract

¼ cup Cocoa powder, sifted

85g dark chocolate, melted (but still warm)

2 tbsp orange liqueur
