Ingredients

Crust:

⅔ cup sweet biscuit crumbs

½ cup cake flour

½ cup coconut

1 tablespoon sugar

⅓ cup unsalted butter, melted

 

Filling:

300ml tin sweetened condensed milk

5 large egg yolks (save whites for meringue)

⅔ cup fresh lemon juice

2 teaspoons lemon zest

 

Marshmallow Layer:

5 tablespoons cold water

2¼ teaspoons gelatine powder

1 teaspoon meringue powder

½ cup sugar

¼ cup white corn syrup

Pinch of salt
