Ingredients

Cake:

2 cups unsalted butter, just cooler than room temperature

3 cups sugar

2 tablespoons finely grated lemon zest

10 large eggs, almost at room temperature

⅔ cup sour cream (full-fat)

1 tablespoon vanilla extract

3 cups cake flour

1 teaspoon salt

 

Pink Buttercream Icing:

¾ cup unsalted butter, room temperature

4-6 cups icing sugar sifted

6 tablespoons 2% milk

1 1/2 teaspoons vanilla extract

Pink food colouring paste

 

Assembly:

900g rolling fondant

Dash lemon oil (optional)

Pink food colouring paste

Icing sugar, for rolling

Large cake board (available at craft or cake supply stores)
