Ingredients

For the dough

3/4 cup whole milk, heated to just above body temperature

4 tsp instant dry yeast

1/3 cup sugar

3 large eggs, room temperature

1/2 cup vegetable oil

3 3/4 cups plain flour

1 tsp finely grated lemon zest

3/4 tsp salt

1/2 tsp ground cinnamon

1/4 tsp ground allspice

1/4 ground nutmeg

1/4 tsp ground cloves

1/3 cup dried currants

1/4 cup diced mixed peel

 

For the hot glaze

1/2 cup sugar

3 tbsp water

1 tsp vanilla extract

 

For the icing

3/4 cup icing sugar, sifted

1 tbsp milk, plus extra if needed
