6 eggs, separated
1 cup sugar
1 cup flour
1/2 teaspoon kosher salt
2 teaspoons vanilla
1 cup small-diced peppermint chocolates


Ganache Topping:
1 cup cream
225g milk chocolate, finely chopped
Whipped cream, for serving


Cocoa Fudge Sauce:
110g butter
1/2 cup brown sugar
1/3 cups sifted cocoa
1 cup cream
A few grains kosher salt
1/2 teaspoon vanilla extract


Mint Syrup:
1 1/4 cups sugar
3/4 cup water
2 cups packed fresh mint leaves
