Ingredients

 100g golden sultanas

 150ml cold tea

 30g butter

 1 ready to cook pheasant

 1 large onion, finely chopped

 3 cloves garlic, crushed

 100g black and green grapes, halved and deseeded

 40g toasted hazelnuts, roughly chopped

 150ml port

 50ml orange juice and zest

 1 cinnamon stick

 a few bay leaves

 Salt and pepper to season

 a handful of chopped parsley
