Reza’s Stuffed Roast Duck

Ingredients

 1 large duck minimum weight 1.6kg

 2 large onions peeled and thickly sliced

 salt and pepper to season

 

STUFFING

 2tbsp olive oil

 2 shallots finely chopped

 2cloves garlic crushed

 1tsp grated ginger

 1 celery stalk finely chopped

 100g chopped pitted prunes

 1 apple grated 

 80g dried cherries

 80g toasted finely chopped hazelnuts

 3 sprigs thyme

 zest and juice of 1orange

 1 egg yolk

 salt and pepper to season

 200g fresh breadcrumbs

 

GLAZE

 1⁄2 cup orange marmalade

 1⁄2 tsp ground cinnamon

 1⁄2 tsp chilli flakes

 juice of 1⁄2 an orange
