Ingredients

 The Dough

 5 cups flour, sifted

 10 g instant yeast

 5 ml salt

 5 ml sugar

 3 eggs (keep 1 yolk for glazing)

 4 Tbs melted butter

 2 Tbs milk

 

The Filling

 2 Tbs olive oil

 1 onion, finely chopped

 300 g lamb mince

 3 cloves garlic, chopped

 1 red pepper, diced

 1 chilli, chopped

 1 small aubergine, diced

 1 tomato, diced

 salt and pepper

 1 tsp paprika

 1 tsp ground cumin

 1⁄2 cup parsley, chopped

 1⁄2 cup coriander, chopped

 150 g feta cheese, crumbed
