Ingredients

For the berry sauce:

  • 400g mixed frozen berries
  • Rind of 1 lemon, grated
  • 120g caster sugar
  • 4 tbsp water

For the layers:

  • 500g cream cheese
  • 1L strawberry yoghurt
  • 1 large Swiss roll, cut into thin slices
  • 1L ready-made custard
  • 250g fresh whole raspberries
  • 250g fresh strawberries, quartered
  • Fresh mint leaves, to garnish
