Chocolate Spice Cupcakes with Swirl Frosting

Ingredients

For the cinnamon truffle:

  • 115g dark chocolate, chopped
  • 1/2 cup whipping cream
  • 2 cinnamon sticks

For the cupcakes:

  • 2 cups plain flour
  • 2 cups sugar
  • 2/3 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp Chinese 5-spice powder
  • 1/4 tsp bicarbonate of soda
  • 1/4 tsp salt
  • 2 eggs, room temperature
  • 1 cup semi-skimmed milk, room temperature
  • 3/4 cup strong coffee, cooled to room temperature
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract

For the swirl frosting :

  • 225g cream cheese, room temperature
  • 1/2 cup unsalted butter, room temperature
  • 3 1/2 cups icing sugar, sifted
  • 1 tsp vanilla extract
  • 85g plain chocolate, chopped , melted and cooled
