Vanilla Birthday Cake with Caramel Cream

Ingredients

For the cake:

  • 3/4 cup  unsalted butter , room temperature
  • 1 1/3 cups  sugar
  • 3 large eggs, room temperature
  • 2 tsp vanilla extract
  • 2 1/2 cups  flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/4 tsp salt
  • 1 cup  buttermilk, room temperature

For the caramel pastry cream:

  • 3 tbsp water
  • 1 cup , plus 3 tbsp sugar
  • 1 tbsp white corn syrup
  • 1 cup  whipping  cream
  • 1 cup  whole milk
  • 1/2 vanilla pod
  • 3 large egg yolks
  • 2 tbsp cornflour
  • 2 tbsp unsalted butter , cut into pieces

For the frosting  and assembly:

  • 3/4 cup  unsalted butter , room temperature
  • 4-6 cups  icing  sugar, sifted
  • 6 tbsp whole milk
  • 1 1/2 tsp vanilla extract
