Carrot Cake with Cream Cheese Frosting

Ingredients

For the cake:

  • ¾ cup vegetable oil
  • 3 large eggs
  • 1 cup packed light brown sugar
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 cups plain flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp bicarbonate of soda
  • ½ tsp salt
  • ½ tsp ground allspice
  • ¼ tsp ground cloves
  • 2 cups loosely packed, finely grated carrot
  • ¾ cup lightly toasted walnut pieces or raisins

For the frosting:

  • 225g cream cheese, at room temperature
  • ¼ cup unsalted butter  at room temperature
  • 3 cups icing  sugar, sifted
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • Lightly toasted walnut pieces, for garnish
