Ingredients

  • 2 tbsp extra-virgin olive oil, plus extra to grease pan
  • 4 garlic cloves, thinly sliced
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh oregano leaves
  • 1 (793g) can whole peeled tomatoes, drained and hand crushed
  • Salt and freshly ground black pepper
  • 1 recipe fresh pizza dough, recipe follows
  • 1 (225g) ball fresh buffalo mozzarella, water drained
  • 1/2 bunch fresh basil leaves

For the fresh pizza dough:

  • 2 packages active dry yeast
  • 2 tsps sugar
  • 2 cups warm water (37 degrees C.)
  • 2 tbsp salt
  • 6 cups plain flour, plus more for dusting
  • 2 tbsp extra-virgin olive oil, plus extra for bowl
