Roast Beer Can Chicken

Spiced Butter:
100 g unsalted butter
3 T balsamic vinegar 
¼ tsp nutmeg 
1 large piece of cinnamon bark 
3 T honey 
4 tsp salt 
1 tsp freshly ground black pepper

Roast Chicken:
1 whole free-range chicken, about 1,7 kg 
Spiced Butter (recipe above) 
Few sprigs of thyme 
1 can of milk stout 
2 whole heads of garlic, top sliced off to expose garlic bulbs 
2 large red onions, quartered 
1 lemon, sliced into 6ths, lengthways
80ml cream
80ml water

Parsley and thyme  and lemon wedges
