Stunning Salmon and Citrus Asparagus

8 x 125g fillets salmon, middle cut, 4 with skin on, 4 with skin removed   
x  Sea salt 
4 cloves garlic, crushed 
Stuffing and topping 
100 g dried cranberries, chopped 
100 g sultanas, chopped 
50 g raisins, chopped 
50 g candied ginger (in syrup), chopped  
4 T fresh parsley, chopped 
Zest and juice of 4 lemons 
Zest and juice of 2 naartjies (or clementine or mandarin)
2 T honey 
2 T olive oil, to drizzle 
Citrus roasted asparagus 
400 g asparagus 
4 naartjies, sliced (or clementine or mandarin) 
50 g flaked almonds 
2 T honey
1 T olive oil 
pinch s + p
2 T butter 
1 tsp harissa paste 
1 tsp whole grain mustard 
250 ml freshly squeezed naartjie juice (or Clementine or mandarin)
1 T lemon juice
1 tsp honey
pinch Salt 
pinch freshly ground black pepper, to taste
