125 g large brown mushroom, sliced + halved

Truffle dressing
4 T red wine vinegar 
4 T extra virgin olive oil 
4 T black truffle oil 
1 clove garlic, crushed 
1 tsp fresh thyme leaves, chopped 
1 tsp sugar 
pinch Sea salt 
pinch freshly ground pepper 

100 g wild rocket 
200 g exotic tomatoes, sliced, halved and quartered
