Stuffed Jalapeno Popper Burgers

Ingredients

  • For the burger patties:
  • 800g minced steak
  • 200g full-fat cream cheese
  • 180g pickled green jalapenos, roughly chopped
  • 1 large egg yolk
  • 20g fresh breadcrumbs
  • Salt and pepper, to taste
  • 1 tbsp olive oil

 

  • To assemble the burgers:
  • 4 brioche burger buns, split
  • 4 slices low-moisture mozzarella
  • 4 slices Red Leicester cheese
  • Handful baby spinach leaves
  • 1 small red onion, sliced thinly and marinated in 1 tbsp apple cider vinegar
  • 8 gherkin slices
  • 8 rashers streaky bacon, cooked until crispy
  • 3 tbsp tomato ketchup mixed with 3 tsp Worcestershire sauce
