1 fresh pear or apple, peeled and diced

1½ cups cake flour
3 tablespoons sugar, plus extra for sprinkling
1½ teaspoons baking powder
¼ teaspoon salt
6 tablespoons cool unsalted butter, cut into pieces
6 tablespoons milk
2 tablespoons maple syrup
1 large egg yolk
1 teaspoon vanilla extract
