Brown Butter Sauce:

8 tablespoons unsalted butter
2/3 cup granulated sugar
2 teaspoons cornflour
1/4 teaspoon kosher salt
2/3 cup milk
2 teaspoons bourbon, whiskey or brandy
3/4 teaspoon vanilla extract

Flapjack:

2 cups pecan nut halves 
1 1/2 cups cake flour (see Cook's Note)
1/4 cup buckwheat flour
1/4 cup cornflour
1/4 cup icing sugar
1 tablespoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1 1/4 cups milk
2 teaspoons vanilla extract
2 large eggs
Icing sugar for serving
