Ingredients

For the plain sponge cake:
235ml vegetable oil
150ml buttermilk
1 tsp white wine vinegar
2 eggs
250g caster sugar
1 tsp vanilla extract
450g plain flour
1 tsp baking powder


For the coloured layer cake:
200g unsalted butter, softened
200g caster sugar
3 large eggs
200g cooked, mashed Ube (Purple Yam)
1 tsp Ube Extract
200g plain flour
1 tsp baking powder


For the white chocolate frosting:
450g cream cheese
225g butter, softened
1 tsp vanilla extract
200g melted white chocolate
900g icing sugar


To decorate:
150g desiccated coconut
