Waffles:

2 cups cake flour

1/4 cup sugar 

1 tablespoon baking powder 

1/2 teaspoon kosher salt 

1 1/2 cups milk 

1 tablespoon vanilla extract 

4 large egg whites plus 2 large egg yolks 

8 tablespoons (113g) salted butter, melted 

1 to 2 jalapenos, chopped

Sauce:

1 cup maple syrup

1/4 cup bourbon 

4 tablespoons (56g) salted butter 

1/4 teaspoon cayenne pepper
