Pastry Dough:

1 1/4 cup cake flour, plus more for rolling (see Cook's Note)

1 tablespoon granulated sugar

1/4 teaspoon kosher salt

115g cold unsalted butter, diced

1 large egg beaten with 1 tablespoon cold water

 

Cheesecake:

225g cream cheese, at room temperature

2 tablespoons plus 1/3 cup granulated sugar

1/2 teaspoon vanilla extract

1 large egg, separated

Pinch of kosher salt

2 cups strawberries, hulled, then halved or quartered depending on the size (about 1-inch pieces)

1 tablespoon cornstarch

Coarse sugar, for sprinkling
