Carrot & Courgette Cake with Rosemary & Orange Crème Fraiche

Ingredients

275 grams self-raising flour

½ teaspoon bicarbonate of soda

1 teaspoon ground cinnamon

1 teaspoon cardamom pods, split and seeds ground

275 grams golden caster sugar

4 large free-range eggs

250 millilitres rapeseed oil, extra for greasing

1 tablespoon vanilla extract

200 grams carrots, peeled and finely grated

200 grams courgettes, trimmed and finely grated (squeeze out any excess moisture)

For the rosemary & orange crème fraiche:

Juice of 2 oranges

2 tablespoons golden caster sugar

2 small fresh rosemary sprigs

200 grams cartons crème fraiche
