2 cloves crushed garlic

2 tbls white sugar

1 red chilli thinly sliced

2 kaffir lime leaves very thinly sliced

Zest of 1 lime

4 tbls lime juice

1 tbls fish sauce Rice wine vinegar

1⁄2 tsp sesame oil

 

SALAD

2 cups diced pineapple

1 cup cubed cucumber

1 cup bean sprouts

3 spring onions with tops sliced

2 tbls chopped coriander

1 tbls chopped mint
