Ingredients

3 tbls Olive oil

100 g roughly chopped cashew nuts

4 large spring onions with tops chopped

2 cloves crushed garlic

1 red and 1green chilli roughly chopped

Juice of half lemon

Zest of 1 ripe lemon.

1/2 cup chopped parsley

3 tbls chopped coriander

1 large tablespoon butter

3 cups cooked rice
